BBQ Relish
¼ Cup chopped uncooked bacon (about 11/2 slices)
¼ cup minced white onion
¼ cup minced red bell pepper
¼ cup minced yellow bell pepper
¼ cup minced pasilla or poblano pepper
1 tablespoon minced garlic
11/2 cup commercial barbecue sauce
¼ cup lightly packed fresh ciliantro, chopped
1 teaspoon fresh lemon juice
Cook bacon in a heavy saucepan until crisp; drain. Add onoin, peppers, and garlic. Cover and cook over medium heat 8 minutes. Stir in barbecue sauce. Bring mix ture to a boil. Cool complitly; stir in cilantro and lemon juice. Make 2 cups.
