Grilled peaches with raspbberry honey
½ cup honey
1 cup fresh ruspberries
6 medium peaches, halved
Cooking spray
Vanilla ice cream
Garnish; mint sprigs
Pour honey into a small saucepan; bring to a boil over medium heat. Add raspberries; cook 3 minuts or just until soft, stirring occasionally. Set aside.
remove pits from peaches; do not peel. (the peel keeps the fruit intact on the grill.) Spray halves with cooking spray.
Grill peach, cut side down and covered with gril lid, over medium-high heat (350o to 400o) anout 8 minutes or until tender, turning once.
place peach halves in serving deshes; top each evenly with ice cream and honey mixture. Garnish. if desired. Serv immediately. Makes 6 servings.
